Maple syrup is a full-environment product, pulling from the soil, water, and air surrounding each tree. A superior mix of elements deep in the Catskill Mountains produce an especially rich, flavorful syrup with notes of dark chocolate and coffee. It takes 40 gallons of maple sap boiled down to produce just one gallon of maple syrup, but our 65,000 maple trees across five mountainside properties keep the taps flowing every spring.
